What does the AI clean-up do?

It removes fillers ("um", "you know"), false starts and repetitions, fixes punctuation and paragraphs, and adds the summary, key points, quotes and chapters. It uses the AI engine you already write books with (including a local Ollama model). Time stamps are kept. The raw, word-for-word transcript is always kept next to the cleaned one.
