Can I turn the citations off?

Yes. In the book's Codex, on the Knowledge tab, untick "Cite the recordings in the text, as (Title, mm:ss)" (the same box is on the first step of the wizard when you start a book from recordings). The AI still writes from the transcripts but without the (title, minute) references.
