Can I keep a page I edited or colored when I change the readers, the line weight or the detail?

Yes. Pages you edited by hand keep their edits when those settings change (as long as the trim stays the same), and locked pages stay exactly as they are. To be safe, lock every page you edited or colored before you click "New designs" or change the kinds of design.
