How do I delete a whole book?

On the Activity Studio page, click the bin next to the book under "Your activity books". The app asks "Delete “Title”? Its puzzles and exported PDFs are removed from your computer." Deleting removes the book's whole folder, with its pictures, photos and every file you exported from it, and it cannot be undone. Copy the exported files you want to keep somewhere else first.
